Cutler Bay Hosts FOG Workshop to Support Local Food Service Businesses

CUTLER BAY, FL – May 18, 2026 - The Town of Cutler Bay, in partnership with the Miami-Dade County Department of Regulatory and Economic Resources and the Department of Environmental Resources Management, hosted a Fats, Oils, and Grease (FOG) Roundtable Workshop on Wednesday, May 13, 2026, at the Town of Cutler Bay Council Chambers.

The workshop was held as part of Cutler Bay’s monthlong celebration of Small Business Month and was designed to help restaurant owners, food service operators, commercial property owners, and other business professionals better understand the County’s FOG Control Program, permitting requirements, Certificate of Use review process, construction inspections, and compliance expectations.

“Supporting small businesses means making sure they have access to the information and resources they need before they run into delays or compliance issues,” said Town Manager Rafael G. Casals. “This workshop brought Miami-Dade County experts from the Building Department, RER, and DERM, directly to our business community, giving owners and operators the opportunity to ask questions, understand the process, and better prepare for success. We are grateful to senior County staff, including Edward Rojas and Rashid Istambouli, for helping us bring this valuable information to Cutler Bay during Small Business Month.”

Representatives from Miami-Dade County Building Department, RER, and DERM provided an overview of FOG requirements, including how fats, oils, and grease can affect sewer systems; the importance of properly maintaining grease control devices; common application mistakes; GDO permit requirements; plan review procedures; inspection readiness; and best practices for staying in compliance. The workshop also included information from Strive305 on small business resources available through Miami-Dade County.
